- Once roasted add the sweet potato to the pan. Using a potato masher, crush the potatoes and beans until crushed but still chunky. Then mix in the quinoa, coriander and egg. NOTE: leave the oven on at this point.



- Combine everything, season with salt and pepper and using your hands, form into 4-6 patties (I did 4 but they were quite big - 6 is probably better). Leave in the fridge for minimum 30 mins.


- Once chilled, heat a tbsp olive oil over a medium heat in a frying pan. Add the burgers. Fry on each side until golden - approx 4-5 minutes each side (you might need to add a little more oil after flipping). Once cooked on each side, pop the burgers into the oven for another 7-10 mins to heat through. Serve with burger buns, salad and anything else you fancy.
